      This is the result of combining work with two lessons from Scoolinary. I sell shoulder replacement implants and have always wanted to make edible versions of our product to give to customers and facilities.

      After taking “Molded Painted Chocolate Bonbons” with Kriss Harvey and “Molding Techniques in Pastry” with Jesus Escalera, I felt inspired to dive head first into making a chocolate implant.

      The mold is made from Sorta Clear 18 food safe silicon. Legos were borrowed from my son’s collection to help with building a barrier- a suggestion made by Chef Escalera.

      I learned how to correctly temper chocolate through Chef Harvey’s lessons and chose to fill the chocolate implant with his Fluer de Sel ganache recipe.

      I love combining tips and tricks learned from multiple lessons and mixing them into one at home.

                      Here is a pic of a stem I brushed with silver luster dust! Looks almost like the real thing! The other picture is of a stem that broke during de-molding. I need to try a couple techniques to get the balance of ganache to shell for flavor AND the ability to get them out of the mold in one piece!
