      Pub-food fusion. Izakaya flavors meet a British classic. I did a saikyo-zuke cod, a common Japanese Izakaya menu option, which is marinated in a miso mixture for up to 2 days then usually grilled or broiled. Instead here, I battered and fried it like a classic Brit pub fish and chips style. I substituted the vodka in the batter with an unfiltered cold sake. The crispy potato nest is a take on another Izakaya dish that is usually comprised of fried string potatoes and cod roe. Here I used very thin slices and finished with salt, umeboshi furikake, dill and caviar instead of the cod roe. The sauce is a yuzu-ponzu tartar with capers. So there you have it. 2 pub, fish and chips dishes from 2 different parts of the world, brought together in harmony on one small plate. 😋

          @sussan_scoolinaryteam Thanks Su! I’m not sure if it fits the challenge because of how I fried my potatoes but I was inspired by it either way. 🙏
