Here’s a question for you all! Do you have a favorite make ahead lunch? I love prepping lunches on Sundays for days I am in the office but am always looking for new ideas. This week I made eggplant curry with coconut rice which was really good.

I love the idea of eggplant curry with coconut rice!
It’s a delicious combination and perfect for preparing in advance. Plus, the colors and presentation look very appetizing. Definitely a great inspiration for my upcoming lunches!.

Same here! I love rice + coconut + eggplants. I must admit, I never could bring myself to do meal prep when I worked in an office. Nowadays (and thankfully, for a long time now), I work from home and don’t “need” to do it as much. But I do confess that I like to prepare an extra portion once in a while. It would definitely save me time to start doing it regularly. Thanks for sharing, Michelle. 😊
