    Can i leave my cake at room temperature to set after applying the ganache frosting? If yes how long will it take to set at room temperature? I don’t have an AC room to work with on ganache so i don’t want to put in the fridge for the fear of condensation

    Yes, you can leave your cake at room temperature for the ganache to set, but the time it takes to stabilize will depend on the temperature and humidity of the environment.

    Ganache setting time at room temperature

    At an ideal temperature of 18-22°C (64-72°F) with low humidity, ganache usually takes 2 to 4 hours to fully set.

    If the environment is warmer (above 24°C / 75°F), the process will be slower, and the ganache may remain too soft or even start to melt.

    Tips for better setting without refrigeration

    1. Place the cake in a cool, dry spot

    Avoid direct sunlight or heat sources.

    If it’s very warm, place it in a well-ventilated room.

    2. Avoid condensation

    If you decide to refrigerate it, wrap it well with plastic wrap and let it come to room temperature before taking it out to prevent condensation.

    If your climate is very warm and humid, you might need to refrigerate the cake for a few minutes before decorating, but be sure to take the necessary precautions.
