Glucose powder can be substituted depending on its role in the recipe:
-Liquid glucose syrup → 1:1 substitution, but adjust the liquid content in the recipe as it has higher moisture.
– Invert sugar (Trimoline, honey, etc.) → Use 80% of the weight of glucose powder, as it is sweeter and contains more moisture.
-Dextrose powder → Use 70-75% of the weight of glucose powder, as it has a lower sweetening power.
-Sorbitol or maltodextrin → Optional for specific recipes like ice cream, but it affects texture.

In the Exotic Salted Butter Caramel recipe, atomized glucose helps control sugar crystallization and adds elasticity to the caramel. As an alternative, you can use:
1. Dextrose powder: Use 70-75% of the weight of atomized glucose, which means 105 g to 112 g of dextrose.
2. Inverted sugar (such as Trimoline or light honey): Use 80% of the weight, which means 120 g. Keep in mind that it adds more sweetness.
3. Glucose syrup (fully replacing the atomized glucose in the recipe): Increase the amount of liquid glucose syrup by an additional 150 g (for a total of 350 g), but this may make the caramel stickier.
The best option to maintain the original texture would be dextrose powder. If you don’t have it, inverted sugar also works well, though it will slightly alter the consistency. Do you have any of these options available?
