Once we glaze the donuts with the vanilla glaze,it will harden on top.And after glazing of you had a bakery shop where i should store it?in a neutral display or i in a fridge display because of the glaze?thanks

The vanilla glaze, when it hardens on top, creates a crispy layer on the donuts. However, it’s important to consider temperature and humidity to maintain the product’s freshness.
Ideally, you should store them in a neutral display case (at room temperature), as the glaze can become sticky or lose its texture if placed in a refrigerated display. The cold could make the glaze turn opaque and affect both its appearance and texture.
Make sure the neutral display case is protected from humidity and direct heat sources to maintain the quality of the donuts. If the donuts are kept at room temperature in a cool, dry place, they should retain their texture and flavor for a good period. The ideal temperature would be between 18-22°C (65-72°F).
If the store is in a very warm climate, a refrigerated display case may be an option, but with the precaution that the glaze doesn’t become wet. In this case, the recommended temperature is between 4-7°C (39-45°F).
