Yes, it is absolutely possible to prepare this pudding the night before and have it for breakfast. In fact, letting it rest longer in the fridge will allow the chia seeds to hydrate even better, giving the pudding a creamier texture. Just make sure to cover it well to keep it fresh, and add the berries and mint right before serving to ensure they stay fresh.
