    Hi there and a happy new year. At Mr. Lluis Costas panettone techniques i have a question.At the topic “Making the sourdough”,at the end of the forth refreshment onwards if i dont want to continue feeding the sourdough for all year can i go to the first solid refreshment so i can product my panettone?i hope you understand what i am asking.thank you

    After the fourth refreshment onwards, if you don’t want to continue feeding the sourdough throughout the year, you can switch to the first solid refreshment. This first solid refreshment will allow you to continue the panettone preparation process without having to maintain the sourdough in its usual liquid refreshment cycle.

    It’s important to remember that the first solid refreshment is a crucial step to give structure to the sourdough and ensure it is in the right state for making the panettone. However, if you decide not to continue with the liquid refreshments, make sure to follow the solid refreshment process properly to maintain the quality of the sourdough.
