Hi Joan.
If you replace the sirloin with venison, the cooking time and temperature might vary slightly due to venison’s lower fat content and leaner texture, which can cause it to cook faster and dry out more easily if overcooked.
Tips for cooking venison in an air fryer:
-Temperature: Keeping the temperature at 200°C should work well in the air fryer, as it allows for a nice exterior sear.
-Cooking Time: For a similar doneness (pink in the center), I’d recommend starting with 10-12 minutes and then checking the internal temperature with a thermometer.
– Internal Temperature: For a juicy result with game meats like venison, aim for an internal temperature of 55-57°C for medium doneness. This will help keep the meat tender and prevent it from drying out.
Monitor the meat with the thermometer near the end of the time to ensure it reaches your desired doneness without overcooking.
Best regards.
