Please disregard i have found the answers could not fnd a way to rete questioni
Hi i just subscribed and i am following the first croissant course by Chef Antonio Bachou (Sorry I believe i misspelled last name) when you see the videos he states the flour is 1350 g with 500g for the butter block but in the recipe book the flour is 1500g
I am concerned for the rest of the ingredients quantities does anything else change ?
Also i have a manual sheeter that allowed me to do half the size of this dough if I do the recipe with half the quantities what size should I shape the dough and the butter block?
PS i have looked d for the answers but i cannot find a way to look at specific questions regarding a course it would be great if the questions could be asked on the course itself to make it easier to check for previous questions and answers
