    If it’s not possible to find ready-made inverted sugar, you can make it at home. Depending on the recipe you’re preparing, this ingredient can sometimes be substituted, though not all recipes allow for this replacement.

    Here’s a homemade inverted sugar recipe:

    Homemade Inverted Sugar

    Ingredients

    375 g sugar

    150 ml mineral water

    1 teaspoon lemon juice

    1 level teaspoon baking soda

    You’ll also need a cooking thermometer.

    Preparation

    1. Place the water, sugar, and lemon juice in a saucepan. Stir gently to mix, ensuring the edges are not splashed or left with sugar residue.

    2. Heat over medium-high heat and use the thermometer to measure the temperature. When it reaches 100°C (212°F), remove from heat.

    3. Let it cool until the syrup reaches 50°C (122°F), approximately 15 minutes. At that point, add the baking soda and stir well.

    4. As it cools, a whitish layer may form on the surface. Remove it with a spoon, and once it’s completely cool, store it in a clean, airtight glass jar.

    Storage:

    In a sterilized, airtight glass jar, it will keep for up to 12 months in the refrigerator.
