    Hi Victoria.

    Yes, you can work without air conditioning, but it all depends on the room temperature and the type of ganache you’re using. If the environment is very warm or humid, the ganache can become soft and difficult to handle. In warmer climates, ganache tends to melt faster, making it harder to work with for extended periods without refrigeration. If possible, try to keep the space as cool as you can. The ideal room temperature for working with ganache is between 18-22°C (64-72°F), at which point the ganache can set well without refrigeration. However, if the room is warmer, it might not firm up properly, and in that case, it would be best to use the refrigerator.

    It’s also important to consider the chocolate-to-cream ratio in the ganache. The more chocolate in the mixture, the firmer it will be.
