Hello,
I just finished the paella course and I was surprised to see onion in all of the recipes- I have often been told that onion is never put in traditional paellas- any feedback on this?

It’s important to note that recipe variations can depend on the region and the chef’s style, so some recipes include onion to give it a different touch, even if it doesn’t follow the strictest tradition.
