    Yes, you can use instant yeast to make a biga. Generally, instant yeast is used in smaller quantities compared to fresh yeast. To make a biga with instant yeast, you can use approximately 0.2% to 0.5% of the total weight of the flour.

    For example, if you’re using 500 grams of flour, you could add between 1 to 2.5 grams of instant yeast. Keep in mind that biga ferments slowly, so you’ll need a long fermentation time at a low temperature to develop the flavor.
