    Hi,

    I couldn’t find glucose syrup 40 de for this recipe. I see only 43 de and powder format 36-40de. Please advise if I can use the powder format or any alternates. I see some in amazon Canada for glucose syrup which doesn’t say it’s 40 de. Can I use that? Please advise.

    Yes, you can use DE36-40 powdered glucose as an alternative to DE40 glucose in your recipes. The difference in the DE (dextrose equivalent) value is minimal and shouldn’t significantly affect the outcome of your preparation. Conventional confectioner’s glucose is also a viable option, although its texture may vary depending on whether it is liquid or powdered. Be sure to adjust the proportions based on the form of the confectioner’s glucose (liquid or powdered) to maintain the consistency of your recipe.
