    Good evening,

    A quick question. The ingredients for the pain de gene of the Equatorial of Chef Antonio Bachour are enough for which size of sheet pan? I am only a home cook and do not have a professional oven at my disposal so I will have to recalculate the amounts to make sure I do not end up with way too much dough for my sheet pan for my oven.     The baking tray that the chef uses for the pain de gene dough is approximately 35×45 centimeters.
