Masala or Garam Masala: This name refers to the most characteristic blend of spices from India. It is primarily composed of cumin, coriander, cardamom, black pepper, cinnamon, cloves, and nutmeg in equal amounts—you can use a tablespoon of each as a measure. These spices are processed together until a powder is obtained.
Answering your second question, one of the most popular masalas is chai masala, typical of southern India and used to make enriched tea. It usually includes cloves, cinnamon, cardamom, pepper, and ginger, but there is no single recipe; it is recommended to use what are commonly known as warm spices.
For masala chai, you will need (cinnamon, cardamom, cloves, and black pepper; other optional spices include star anise, nutmeg, or licorice). The recommended amounts are:
– ½ stick of cinnamon
– 5-7 green cardamom pods
– 3-4 cloves
– 5-7 peppercorns
