Reduced Croissant Recipe Dimensions

I want to reduce the Antonio Bachour recipe to 1/2 but need help with adjusting all the dimensions please – butter block and rolling to specific sizes. Advance thanks!

If you are preparing half the recipe, the butter for laminating should measure 21×21 centimeters.
And the dough should be a 35.5 x 21 centimeter rectangle.

Thanks for your speedy reply! Can I also check the dimensions for cutting the croissants? I was a little confused watching the video… Antonio seemed to be measuring rectangles but cutting triangles. Thank you! 🙂

Yes, the chef first uses the rectangles as a guide to roll out the dough triangles.
You can use dough triangles of the same size that the chef uses, which is 9cm x 38cm or you can make them smaller if you wish.
You just have to be guided by the length and width of your final dough, calculate and divide the dough to obtain the correct measurement according to the size you are looking for.
