    Hello,

    I am doing the pastry course by Antonio Bachour, Entremets and tartlets. I would like to ask what is the bloom for the silver gelatin sheets that the chef uses in this class? Thanks a lot for the help !

    The silver gelatin sheet has a bloom of 180 to 190.
