Pear Puree in Fleur de Sel Caramels
Posted by Betsy Schoettlin on March 28, 2024 at 00:17Is the pear puree necessary in this? Can it just be left out or do I need to adjust the remaining ingredients? I would prefer to make a straight caramel, without fruit puree in it.

Could you help me by telling me to look up what dish you are referring to? So I can review it and help you with an answer.

The amount of puree in this recipe is considerable. If you want to do without the puree, you would have to do a test and adjust the quantities.

That’s what I thought. Will there be any non-fruit or chocolate caramel recipes added to the lessons? I’m looking for a soft caramel that holds its form without being too stiff.

I send you the link to this course. In chapter 8 you will find a recipe that could help you.
