Ha gao dough recipe in Dim sum class

100g Tapioca and Rice starch. How much tapioca , how much rice flour? There is also glutinuos rice flour and non glutinous. How do we know what to use?

The amount of tapioca starch and rice for the dough is 200 grams of tapioca starch and 200 grams of glutinous rice flour.
