    in some receipes (chocolate bonbon, and ganache) the chefs use alcohol and liquor. what other products and alternatives we can use.

    Hi Lin

    What liqueur does in a bonbon filling is enhance the flavor but if you do not want to use liqueur in the bonbons, you can do without it. You could try using some food grade essence. For example, if you are preparing a coconut bonbon and you do not want to add the “Malibu Rum” you can add a few drops of essence.
