freezing croissant dough
Posted by Kate Mediana on January 25, 2024 at 03:16Hi! was wondering if I could freeze the croissant dough after I have rolled and shaped it? How long can it last in the freezer?

You certainly can.
From memory, Antonio recommends up to a month.
I may be corrected on this.
Make sure you cover them really well. Place into an air tight container as well. 😁

Hi Kate
You can freeze the dough as our colleague tells you.
And it can last between 1 to 2 months, make sure to wrap it in film and store it in a container with an airtight lid so that the cold of the freezer does not dry out the dough.
Greetings.
