we could get the dough ready with the butter and the folds and put it to the freezer until we can use it ?

Of course, you can make the folds and freeze.
When you need to use the dough, just leave it in the refrigerator for a few minutes and then at room temperature so you can work with it easily.If you have any questions or doubts regarding the courses, you can ask them here and we will be happy to help you resolve them.
