  Kind of colors for croissant dough

  Hi! I’m taking a course on croissants and the Antonio Bachour didn’t show what kind of colors he used for the dough for the strawberry croissant with mascarpone.

  Could you tell me please about that? ☺

  Any gel color would do. I use americolor.

  The ideal is to use dyes or colorants in gel or paste, these have more concentration of color and you need to use less quantity to obtain the color.
